In this hands-on class learn to plan, prepare, & enjoy easy, quick, healthy, & delicious meals made from whole foods. You’ll learn vegan, vegetarian, & omnivorous options, as well as where to find the cheapest, highest quality, nutritious & most local ingredients.  We’ll review the benefits of choosing seasonal and local foods as well as our regional limitations so you have solid format for maximizing nutritional intake with minimal impact.  We will provide variations on each meal so that everyone can meet their particular dietary needs or restrictions (vegan, vegetarian, omnivore, gluten-free, etc).

We’ll also discuss the importance of, and different ways to maintain mindfulness and enjoyment during the entire process. You will come away with a better understanding of how and what to eat to rebuild your health, harmonize your constitution and attend to your personal preferences or restrictions.

INSTRUCTOR Thomas Manthey has been cooking for 30 years, was chef and head dessert cook at the amazing Heartwood Retreat Center & School of Massage, cook at a macrobiotic restaurant in Chicago, and a gardener at Organic Kauai Farms.  He is now one of the cooks & master gardeners at the Men’s Vision House Community.

* Class 5 (2/4) Baking Breads, Muffins (including Gluten Free)
* Class 6 (2/11) Sweet Treats for Valentine’s Day: Healthy Cacao (Chocolate) Candy & Treats
* Class 7 (2/18) Fermenting a Hearty Breakfast: Sourdough Pancakes, Breakfast Porridge & Sauerkraut (Assisted by Instructor:  Jonathan Burger)
* Class 8 (2/25) Thai Soups & Stews
